Quick Green Bean and Tomato Salad
This is a great summer salad to make when you are overrun with green beans and tomatoes from your garden. It is simple and delicious!

Green Bean & Tomato Salad
I love to garden. There is something so satisfying about planting, tending to growing plants, and then reaping a harvest. But, there are times that the harvest can be a bit overwhelming! Times when you may head out to check the plants, only to find that you have beans and tomatoes to harvest yet AGAIN...like they just replenished overnight...and yesterday's harvest is still in the refrigerator waiting to be processed!
Don't get me wrong. I am so incredibly thankful for a good harvest. Thankful to be able to freeze or can produce to enjoy in the winter months. Thankful for the way that it stretches our grocery budget. Thankful for having produce available to make a quick side dish (or main dish) on a moment's notice.
That brings me to this recipe. This Bean and Tomato salad is not fancy (not at ALL!). It is not complicated. It does not have dozens of steps or require hours of work. It's easy. It's simple. It's fast. All in all, it's perfect for those times that you have a surplus of beans and tomatoes, and it's perfect for those times that you need to whip up a quick side dish in 10 minutes.
The recipe was actually my mom's. Every time I make it, I remember her...which makes it all the more special to me. I hope you enjoy it as much as I do.
Recipe Notes:
Green Beans - The recipe calls for fresh green beans. This is important because you get a bit more "crunch" with them. Canned green beans will not work well.
Tomatoes: Again, you will want to use fresh tomatoes, not canned tomato chunks. However, you can use whatever size tomatoes you have. I have made this recipe using full-size beefsteak tomatoes, Roma tomatoes, grape tomatoes, and cherry tomatoes. You can even use a mix of tomato sizes if you prefer!
Italian Salad Dressing: Honestly, just use your favorite brand. We often have the Kraft Zesty Italian Dressing but you can use whatever brand of Italian dressing you prefer.
Add-ins: This is where you can get as creative as you'd like! There are so many things you can add in! I love the added creaminess of mozzarella cheese. Little chunks mixed in is always a delicious option. You can add some crunch and flavor by mixing in onions. Green onion or red onion pieces go well with this salad. You can even add some texture by including chickpeas! There are so many options. Look in your refrigerator and pantry and see what you have!
Serving dish: These glass dishes are fantastic because you can serve in them...the glass does a lovely job of showing off the beautiful colors of the salad...and then when you are done, you just pop the lid on and put it in the refrigerator for later! Easy peasy!
