Easy Breakfast Meals

When camping, the last thing you want is a complicated camping breakfast that eats up precious time and energy. Easy breakfast meals are crucial for starting your day on the right foot. Here are a few simple camping recipes that you can prepare while groggily sipping that first cup of camp coffee. And...they don't require any cooking! Bonus! No need to fire up the stove or kindle a campfire. Just prepare, eat, enjoy these no cook camp meals, and then head out to the day's adventures!

Overnight Oats

You'll need to make this one ahead of time, but trust me...you'll be grateful when you roll out of bed in the morning and breakfast is already done!

Ingredients (serving size of two):

  • 1 cup rolled oats

  • 1 cup milk (dairy or non-dairy)

  • 1 tablespoon honey or maple syrup

  • 1/2 cup of your favorite berries

  • 1 tablespoon chia seeds (optional)

Preparation:

  1. In a mason jar or any portable container, combine the oats, milk, and sweetener. You may have a ton of mason jars at home (like me), but if not, this Stanley insulated food jar is a product that has multiple hiking/camping uses.

  2. Stir in the chia seeds (if using).

  3. Top with berries.

  4. Seal the container and place in your cooler overnight.

  5. In the morning, simply grab and go. Your breakfast is ready to eat!

Pro Tip: Prepare multiple jars at once to have meals for multiple mornings ready to go. Save even more time (and gain a few minutes of extra sleep).

Fruit and Nut Yogurt Parfait

Ingredients (serving size of two):

  • 1 cup Greek yogurt

  • 1/2 cup granola

  • 1/2 cup of your favorite berries

  • 2 tablespoons chopped nuts (if desired)

  • 1 tablespoon honey (optional)

Preparation:

  1. In a bowl or jar, layer half of the Greek yogurt.

  2. Add a layer of granola, followed by a layer of berries.

  3. Repeat the layers, finishing with a sprinkle of chopped nuts on top (if desired).

  4. Drizzle honey over the top if desired.

Ingredients (serving size of one):

  • 1 whole wheat tortilla

  • 2 tablespoons peanut butter

  • 1 banana

  • 1 tablespoon honey or maple syrup (optional)

Preparation:

  1. Spread the peanut butter evenly over the whole wheat tortilla.

  2. Place the banana at one end of the tortilla.

  3. Drizzle honey or maple syrup over the banana, if desired.

  4. Roll up the tortilla, wrapping it tightly around the banana.

  5. Slice into bite-sized pieces or eat whole for a convenient, portable breakfast.

Avocado Breakfast Wrap

Ingredients (serving size of one):

  • 1 avocado

  • salt, pepper, or desired seasonings

Preparation:

  1. Mash the avocado in a bowl and mix it with lemon juice. Note: This step could be done ahead of time.

  3. Spread over the tortilla.

Breakfast Charcuterie Board

I love this one for multiple reasons. One, it looks great, but more importantly, it is SO easy...and it is simple to customize to your own preferences.

Ingredients (ideas...but you can substitute with your own preferences):

  • granola bars

  • dried fruit

  • nuts and seeds

  • fresh fruit

  • trail mix

  • muffins or bars

  • hard-boiled eggs

  • graham crackers

Preparation:

  1. Choose your board. You may opt to lay a clean table cloth down on your picnic table and use that. However, I would recommend using a large cookie tray as your board. It is easily movable and leaves your picnic table a bit more free for eaters! Here are a few options, if you are looking: 1) a camping-themed food serving tray...so cute! 2) a snackle box type of option...great for prepping ahead of time!

  2. Arrange your charcuterie items in any way that you'd like. I think grouping by color is especially pretty, but it is up to you.

  3. Grab a plate and choose your items. Enjoy!
