Citrusy Cucumber

& Tomato Salad

Cucumbers and tomatoes are garden veggies that can produce A LOT of produce in a short amount of time. It is nice to have a few recipes on hand that are quick, easy, and that use some of that delicious harvest as it becomes available from the garden. This is a recipe for a simple side salad that pairs well with almost any summer meal. It is bright and citrusy (perfect for summer) and it has a satisfying crunch. I hope you enjoy it!

• Tomatoes: Be sure to use fresh tomatoes for this salad. Canned tomato chunks will not hold up well.

• Optional Add-ins: The recipe suggests some add-in and/or topping ideas. I suggested a few options that add some "crunch." However, this is really where you can let your own creativity shine! See what you have in your pantry and get creative!

• Serving dish: These glass dishes are fantastic because you can serve in them...the glass does a lovely job of showing off the beautiful colors of the salad...and then when you are done, you just pop the lid on and put it in the refrigerator for later! Easy peasy!
